Crunchy Cabbage, Apple & Walnut Salad
Summer is here! Well and truly. Perth is HOT. Tonight is a real stinker in fact, one of those nights that only a salad or a smoothie will do for dinner.
Maybe a salad like this one perhaps? A sweet, crunchy, nutty salad that is perfect on its own or alongside some grilled pork belly. Mmmmm-mmmm! Delish.

You will need
Salad:
1/3 head purple cabbage, sliced
1/3 head white cabbage, sliced
1 apple, julienned
1 cup walnuts
Dressing:
2 tbsp tahini
1 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp lemon juice
What to do
To make dressing, put all ingredients in a screw top jar and shake until well combined and creamy. Season with salt and pepper if you like.
Combine cabbages, apple and walnuts in a bowl and mix through dressing. Enjoy!
Serves 4.
