Raw Rainbow Tacos With Avocado
These delicious (and effortless) Raw Rainbow Tacos are just one of the recipes I've contributed to Simply Replenished's Holistic Spring Cleanse that is currently underway. Created and hosted by my friend Jasmine Mathews, the cleanse is a 2 week online program focussing on the liver that provides its participants with a great amount of information, support and community - all crucial elements to getting the cleansing process right.
I've been thrilled-to-bits to be apart of the program and it seems a lot of the cleanse participants are equally thrilled with this recipe in particular. (Lots of Instagram love for it which is superb - see above pics!)So I thought I would share it with you today. These tacos are cleansing, light and liver-loving as well as simple, scrumptious and fun to make. Enjoy!
You will need
1 head cos lettuce
2 medium carrots, grated
1 medium beetroot, grated
4 tbsp crushed mixed walnuts, hazelnuts and almonds
2 limes
What to do
Wash, trim and arrange cos lettuce leaves on plates.
Fill leaves with carrot and beetroot and top with nuts.
Squeeze lime over tacos and enjoy! Serves 4.
